Proposal for a succulent lunch : Potato stuffed with mushrooms!
- 4 potatoes
- 300g mushrooms
- 200g mayonnaise (if you fast, replace it with Lenten)
- 1 cup wine vinegar
- Juice of 1 lemon
- Salt and pepper to taste
Boil the potatoes, but keep in mind that you should stay with shell and hard. When cool peel and make a hole in the middle.
In a deep saucepan combine 3 cups of water with vinegar, pepper and salt and allow the liquid to boil. Then add the sliced mushrooms and leave to boil for 3 minutes. Remove and strain well.
Mix the mayonnaise with the lemon juice and add the cooked mushrooms.
With this mixture fill the potatoes and leave them a few minutes to cool in the refrigerator.
Serve with salad.
